You're welcome. They actually made pretty good crackers. Roll them super thin. It makes them better.

how would you know if your flour calls for it.... If I were to buy say, rice flour, would it say on the package that I need to use xanthan gum?

Yes, it will tell on the bag (or box) that the flour comes in.

The above recipe calls for "flour", not "baking mix". There are gluten free baking mixes available. Those usually do not need xanthan gum. The xanthan gum acts on the flour the same way that gluten does. The more you want your dough to be able to rise, the more xanthan gum you would use.

As I have some problems with my stomach, my doctor recommended me trying gluten-free food. So, I'm glad that I've found this thread as there is much useful information here. Recently I've also read about food sensitivity test on this Online pharmacy website and become interested in it. Did anyone try it?
