I am pesco-vegetarian (only fish I eat is shrimp, salmon & grouper). Was vegan until we moved to Mexico, where fish is the main diet in our area. Love to swap recipes! Here's one I made this week that the whole family loved:
Pasta with Blackened Tomato Sauce
8 oz fusilli
10-12 plum tomatoes
1/2 c. olive oil
Epicure Selections margherita pasta sauce mix or other pasta seasoning
sea salt and black pepper, to taste
parmesan cheese (optional)
crushed red pepper (optional)
Cut tomatoes in half lengthwise, and place, cut sides up, on baking sheet. Brush with olive oil, and sprinkle with pasta sauce mix.
Roast tomatoes at 400F for 45 - 60 minutes until they are soft and browned on top.
Prepare pasta as per package directions. While pasta is cooking, mash 1/2 of the tomatoes in a large bowl along with remaining olive oil and salt & pepper. Add remainder of tomatoes, cutting into large chunks if you wish.
Drain cooked pasta, add to bowl, and toss, adding parmesan cheese and/or crushed red pepper if desired.
Substitution: if you do not have pasta seasoning, my substitute a mixture of italian seasoning and garlic and/or basil and/or crushed red pepper.
Serves 4-6.

We're a vegetarian family (me, DH, and our 2.5 year old son). I've been vegetarian for almost 10 years, and I love it. I was vegan for several years, but we started eating eggs and dairy again once I got pregnant (mostly for the convenience of having more meals to make, rather than for any health benefits...) I'll have to post some of our standard recipes here - they aren't anything fancy, but I think they're yummy  I actually don't use a ton of soy, but rely on beans more. Black bean quesadillas, chickpea burritos, pasta, grilled veggie sandwiches, vegetable wellington, quiche, omelets, etc... And all are pretty fast/easy too!

I've never had "blackened" tomato sauce, does it turn black is that why it has that name? Either way it sounds yummy!

Blackened tomato sauce is soooo yummy! As the tomatoes bake in the oven, they get black around the edges, thus the name....the blackening adds a wonderful richness to the flavor. Unlike the name, the tomatoes do not burn they just get a deeper, richer flavor that does not taste burnt.

Proud veg head here  for over 4 years now. I'm happy to see some discussion about this topic! Living here in Lincoln, Nebraska makes being a vegetarian a little difficult, but I always seem to make it work!
I will share some recipes after I look through some of my favorites this weekend.

Yeah, WWP, I bet it's hard to be vegetarian in Nebraska, lot's of beef farmers.
Well, I'm not vegetarian, but I have a friend who is, she made 'bacon' out of egg plant. (I actually just wrote about this in another post) I don't remember exactly how she did it, but I found a recipe that sounded similar. I have to admit, it was pretty good - and that's coming from a bacon lover.

oooo okay! LOL.. here we go!
Gelatin is definitely a meat product.. boiled hooves kinda makes you go ewwww...!
I don't eat fish or meat unless someone invites us over for dinner and i have no choice in the matter. I'm not going to offend my friends, I won't eat much of it, I'll eat more veggies and such instead with a little itty bitty piece and slowly eat a bite. But if I have a choice I won't eat it. I know that's not the norm.. but that's my boundary..
I'm really enjoying it though. Although a few days ago I was nauseated and gassy. I'm still gassy but feeling better. It is much healthier than before and I feel good. I even feel better just in knowing that I'm making a good decision!
Anyhow, I just finished week #2, onto #3!!
Oh are any of you on veggieboards.com? I am, under the same user name!

Yeah, boiled hooves is like, yuck! Very sick to think about. (I eat it though, I just try not to think, ha-ha!) I don't think I could get by without meat. I love fish, and beef, and... well, all meat. I have a super high metabolism, too, so I really don't think I could live on just veggies. I do love veggies, though. And I eat a ton. I really admire you for sticking to the diet. (I know 'diet' is not the right word, but my vocab is really bad...) Way to go!

^^ I don't JUST eat veggies.. lots of beans and whole grains. I've actually been eating much healthier now. Along with more fruits. But my fiber intake is way up and so is my protein.
I kinda just gave up meat in one day.. but I know others transition over time. So far the only craving I have gotten is for breakfast sausage. But, I have not indulged and it's been 4 weeks...
