Default Cinnamon Rolls!!!

Now, I've made cinnamon rolls plenty of times before, but this was a new recipe for me. My best friend was in town over the weekend, and she's really wanted to try this recipe, but says it scares her, lol. She's only recently started baking from scratch, and has never made any sort of yeast dough/bread. So, I figured why not make this recipe together! I thought about cutting it in half, because it makes a LOT, but again, I figured why not tackle the full recipe and really have some fun!!

It's a Pioneer Woman recipe. Here's a link to her actual recipe: PW Cinnamon Rolls.

I didn't make any changes to the dough recipe, except I did have to add a bit more flour than called for, maybe one cup more in total. The other thing I did was cut back on the butter after rolling out the dough. I probably cut the butter in half, and trust me, it was still plenty buttery!!

However, we did change the frosting recipe. I left out the coffee completely (though I did have to add a bit more milk to make up for it) and used vanilla extract instead of the maple flavoring. It was quite yum!! I believe my dh called it a diabetic coma on a plate, LOL.

We got seven, yes 7, pans of cinnamon rolls out of it! We demolished one pan right there (it wasn't just the two of us, my dh and kids helped out!), she took one pan to her dad's house, my dh dropped off a pan with a co-worker, and I froze the rest to have later!!

Just thought I would share our fun cinnamon roll experience!

Oh wow.
Those looks so delicious!
I love how she keeps mentioning that they are not non-caloric!

I would be all over those if I wasn't losing weight. I have no will power, so if I was to make them, I'd eat too many! It's bad enough that I had birthday cake at/after my daughter's birthday party.... I'll have more on her actual birthday on Wednesday, plus McDonald's because that is what she wants for her birthday dinner, plus we are going out for dinner on Friday for my birthday and having a party on Saturday. I'm going to gain this week! But it will be worth it! Then, back on track...... I'll be bookmarking that and maybe I'll make them after I reach my goal.

Man, I stopped breastfeeding 2 weeks ago and I swore I was going to get right back into my diet, but almost 2 years of not dieting has not helped my self control...
Those cinnamon rolls look absolutely delicious. I will have to count on my hatred of being in the kitchen to stop me from making them!

thanks so much for sharing the recipe! I just made sure I have all the ingredients. The kids and I are going to make them tomorrow. I think we'll share with the neighbors (rather than Irish Soda Bread this year) if it makes as much as you said. Did they freeze well?

They look amazing! Her recipe is awesome and in great detail. I think I would have to at least 1/2 the recipe and maybe even decrease it more, that's huge!!
Although would the dough freeze well?

I froze about half of the cinnamon rolls. I haven't taken any out of the freezer yet, so I can't tell you how they turned out (was thinking about pulling out one for tomorrow though). I froze one pan before baking, and then froze two others after they were baked, iced and cooled. I'm not sure if she says on her website, but I know in her cookbook she gives instructions on what to do when they are frozen. I'll pull it and list them!

I had thought about cutting it in half as well. That would be a much more manageable amount!

That would be great.. there's only 2 of us.. I would like to make these though! I think I would still halve the recipe and freeze a bunch. Or maybe wait for a family brunch....

Okay, here are her hints that are in the cookbook. I hope it makes sense, lol.

Unbaked: cover with foil after placing in the pan, but before the rolls rise. When ready to bake, allow to thaw and rise before baking. Ice as directed.

Baked: cover and freeze the baked, iced cinnamon rolls after they've cooled. Pull out of the freezer and warm in a 250'F oven for 15 minutes.

hmm.. I never thought about baking, icing them and then freezing them.. that almost seems more convenient for me.. thank you very much!!
