Ok, this is an old recipe that I just pulled out of archives. I changed it slightly from the original. It's an old fashioned ice cream, made with fresh farm eggs.
Here's my recipe:
2 1/4 Cups sugar
1/4 cup plus two tablespoons flour
1/2 teaspoon salt
3 cups whole milk
2 cups half and half
4 eggs, beaten
4 cups whipping cream
2 tablespoons vanilla extract (I use Madagascar vanilla)
Mix sugar, flour and salt in a saucepan. Gradually add milk and half and half. Cook over medium heat for approximately 15 to 20 minutes, or until mixture gets slightly thick, stirring constantly.
Gradually stir about a cup of hot liquid into beaten eggs.Add egg mixture into remaining hot mixture, stirring constantly. Cook for one minute and remove from heat.
Refrigerate for two hours. Combine whipping cream and vanilla in a very large bowl. Add chilled mixture, stirring with a wire whisk to completely blend. Freeze in your ice cream freezer according to your instructions.
The farm fresh eggs make the ice cream batter look slightly yellow, but the ice cream freezes hard and is very tasty. And just for the record, I did not eat all of this ice cream. It was shared all around.
