Pour into an 8" x 8" cake pan. Top with more cheese and any of the optional toppings. Let it set in the refrigerator for a couple hours before eating it. Keep it covered with plastic wrap or a lid.

P.S. Get it? 'Aunt Chilada' (Enchilada) and 'Jimmy Changa' (Chimichanga)?

I make my own spaghetti sauce from my DH's family...

1 27 ounce can of tomato sauce (or 2 15 ounce cans)
1 TBSP of Italian Seasoning
2 TBSP Sugar (I know not good for you, but I use the organic stuff... has to be better right )... it cuts the acidity of the tomatos and makes it taste SO good
1 TBSP of onion powder or granulated onion (DH hates onion chunks)
2-4 gloves of garlic finely minced or pushed through a garlic press
2 TBSP (or so) of olive oil

Put all ingrediants in pan and stir- heat till bubbling then reduce heat and simmer for at least 20 minutes... I usually start the sauce then start the water for the noodles and by the time the noodles are done, sauce is ready.

Add meat as desired (Italian sausage, hamburger, ground turkey/chicken) 1/2 to 1 lb is plenty.

Also makes a good pizza sauce, if you reduce sugar to 1 TBSP and then add an additional tsp or so of Italian seasoning, and heat until sauce is thickened up (you can "plop" some sauce on top of what's in the pan and the indentation stays).

DH makes Lasagna a couple of times a year, I make a garlic sauce we serve with noodles and chicken (basic white sauce with garlic and romano cheese added).

For mexican, I make tacos, fajitas, enchiladas, quesadillas, and a meat and potato quiche with taco meat. I used to make tamale pie, but DH hates it so it's no longer on the menu.

Your recipe is similar to the one I used this year canning. I was able to can about 25 quarts of Spaghetti sauce, 50 quarts of tomato soup, 14 quarts of salsa, and 12 pints of pizza sauce.

It was fun I processed everything outside on our handmade grill. I think I may use your version one day to determine if I want it next year.

That's very similar to my recipe as well, except I usually use tomato puree or crushed tomatoes!! The little bit of sugar really does help to cut the acidity, and sometimes I notice I need a little less/more than others. And I use onion powder too, usually, because DS hates onion chunks, lol!!

You guys are funny. I read about a woman whose husband hated pepper. She liked it. So for years she used white pepper and he never knew the difference.

That's the only part of the story I remember. I'm not sure how it came to be that she had to tell him, or maybe he found out.

DH doesn't like chuncks of tomato either, thus the sauce only.

I buy emerald valley organic salsa and DH will eat it in such a way that all the liquid is gone and left is a thick mass of tomato, onion and whatever other chunky things they put in there... I don't know how he does it.... makes it weird to eat for me, but still tastes good.

For lasagna I use tomato sauce with a 1/2 of green pepper chopped, about 3/4 onion chopped and garlic powder.

I use ricotta, monterrey jack and cheddar cheese.
Then, of course the hamburger and noodles.

It's alittle simple, but it sure is good.
