That's funny! My dad hates garlic, too. My mom tries to slip it by him, but he always catches it! He says garlic gives him a stomach ache, but she thinks it's good for him. We do eat a lot of Mexican, and Italian. I don't like TexMex, though, I like 'authentic' Mexican the best - like lots of avocado. Italian... I'm not a real big fan. I'll eat it, but it's not my favorite. I guess American food is the best to me. Fried chicken and fish, grilled steak, yum! Can't get enough!

I made some frijoles a la charra last week, and they were so good!!!

Frijoles a la charra

1 lb dried pinto beans
2 smoked ham hocks
4 cloves garlic, whole
1/2 medium onion, chopped
3 jalapeno peppers, halved & seeded*
1 (14.5 oz) can diced tomatoes, undrained (or 2 cups fresh chopped tomatoes)
1 tomatillo, chopped
1 cup chicken stock or broth
4-6 slices bacon cut into 1-inch pieces, optional
1/2 cup chorizo, casing removed and crumbled, optional
salt to taste
1/2 cup chopped fresh cilantro

Sort and rinse the dried pinto beans. Cover with 6-8 cups fresh water (or enough to cover by one inch) and soak overnight.

Drain the beans. Place in a large pot and add enough fresh water just to cover. Bring to a boil. Add the smoked ham hocks and whole garlic cloves. Reduce heat and simmer for one hour. Remove the garlic; mash or mince the garlic and return it to the beans. Add the onion, jalapeno peppers, tomatoes, tomatillo, and chicken broth and simmer for another 1-1/2 to 2 hours or until beans are tender. Stir occasionally and check to make sure there's enough water.

In a skillet over medium heat, cook the bacon until almost crisp. Add the chorizo and cook until done, stirring frequently. Add the mixture to the fully cooked beans. Taste and add salt if necessary. When ready to serve, top with the freshly chopped cilantro.

*You can also leave the seeds and veins in the jalapenos, and add them to the beans sliced ("nacho style"). I left them halved and removed the veins and seeds to cut back on the spiciness a bit, and so I could pick the peppers out easily before serving to the kids. You can add more jalapenos to suit your taste if desired. (Some freshly chopped jalapenos added in at the end would make for a nice kick too!).

Okay, my mom says that TexMex is the kind I like, and that I don't like authentic Mexican. Whatever it's called, I like the kind with lots of avocados.

I make something like chilli con carne, taco shells, guacomole, tomato soup that's from mexican

About italian: lasagna, pasta(easy and tasty), tuna salad, pizzas, minestrone soup

Yum! That sounds really good! (Especially the guacamole!) I love chili!! Okay, so now I'm thinking it may be California style Mexican food. Don't know. I just like lots of tomatoes and lots of avocado!!!

I LOVE homemade italian.. Being vegetarian now I just don't add meat. I will make meat balls for DH since he really loves them. Italianwise: homemade sauce, lasagna, eggplant parm. Alfredo sauce. I'm going to make a blue cheese alfredo sauce when we have people over our house next, a different kinda taste I had it at a restaurant with walnuts and gnocchi and it was AMAZING! I think I'll skip the walnuts and use angel hair pasta when I make it though..

Mexicanwise: I LOVE bean tacos of any kind! Sometimes I'll mash black and kidney beans a bit. With garlic powder, onion powder, cumin, chili powder, cayenne, salt...
I also enjoy: chopped up avacado, beans (whatever kind), with mushrooms (sometimes I'll skip), onions, garlic, salt and tomatoes or salsa all thrown into a tortilla! Lovely!!
Enchiladas with beans and cheese and lots of spice!

I'll be growing tomatoes this year. I'll prolly can some sauce, salsa and I may just venture into tomato soup, never really considered that! I'll also be growing hot peppers, I will definitely be cannning some: pickling, sweet and spicy jelly... OO I can't wait!! I love all this food!!!

You just saying that about canning tomatoes and peppers makes me crave them! Oh so good! Just had some fresh pico de gallo last night! Yummmmm!
