Default Egg salad...

This morning my mother told me that she never had egg salad before...so I made some .

1/2 cup mayonnaise
1 teaspoon dried minced onion
1/4 teaspoon salt
1/4 teaspoon pepper
6 hard-cooked eggs,chopped
1/2 cup finely chopped celery
lettuce leaves or bread

Directions:
1. In a bowl, combine mayonnaise, onion, salt and pepper.
2. Stir in eggs and celery. Cover and chill.
3. For each serving, spoon about 1/2 cup onto a lettuce leaf or spread on bread.

Mmmmm. I love egg salad. I usually add a little sweet pickle relish to mine as well.

Thanks for the recipe.

no mustard? Sounds tasty! For a quick one I just do mayo and mustard with the eggs. Sometimes I'll add different spices and what not, once in a while onion, but only if Hubby isn't eating it since he doesn't like onions in it..
Sounds good...Did she like it??

I haven't tried it with celery and onions. That would be a good mix. It adds the crunch. I always had the simple egg salad with mayo and some salt and pepper. I don't like the taste of mustard on its own very much. Maybe adding it to a salad would make me eat it.
