Default Haystack cookies

Last year I was looking online for the recipe for Haystack cookies. The recipe calls for butterscotch chips and chow mein noodles and I'm not sure what else.

I never found it, but I tried another recipe that's called haystack cookies and tried it. They're yummy for the tummy (but not great for the weight. lol)

Here's the recipe:

1 cup butterscotch chips
1.5 cans chow mein noodles
3/4 cup creamy peanut butter
2 cups peanuts
4 cups semi-sweet chocolate chips

directions~

1. Line 2 baking sheets with waxed paper or parchment paper. Or lay an equivalent amount of the paper on the counter top.

2. In a large saucepan, melt and stir the chocolate chips over low heat until completely melted.

3. Stir in butterscotch chips until melted.

4. Add peanut butter and stir until smooth.

5. Remove from heat.

6. Stir in peanuts and chow mein noodles.

7. Drop small spoonfuls of the mixture onto waxed paper. Allow cookies to set up for about 1 hour before eating. You can freeze them in a Ziploc bag and take a couple out at a time to eat.

You can also add a cup of m&m's to the recipe. I didn't add them because they're sweet enough without extra candy.

I substitute 2 cups of the semi-sweet chocolate chips with 2 cups of milk chocolate chips.

Cookies of any kind (even store bought!) don't seem to last more than a day or two in this house! The kids have learned to hide half of what they bake or Dad will eat it all!!!!!!! (I hope he doesn't see this)

Now for the stupid question: What are chow mein noodles? I always thought that they were those icky, dry crunchy things that come with Chinese food that we give the dog as a treat..... If they come in a can, that makes me think that they are wet......

Cookies last a long time around here, usually. The haystack cookies..... not so much. They go pretty fast if I leave them out.

You're right. The chow mein noodles are the little squiggly things you can buy where the other Chinese food is in the store. They aren't wet though. They're kind of thin and light brown and about an inch or 2 long. They're about the thickness of cooked spaghetti noodles.

I wouldn't have thought they would taste good in cookies either, but they do.

I found out that if you buy them in the bag, you get a lot more for your money. They're not expensive anyway.

If the insanity in my house comes to an end today, I'm going to try to make some haystacks. I'll measure how many cups equal 1 can.

All done. I think they turned out pretty good.

You don't need to buy the can. One bag (12 oz.) is the right amount for 1 batch. It equals 1.5 cans. Poifect!!! Nyuck! Nyuck!!

They're about as easy as making rice krispies treats. The only difference is that it takes longer to scoop these out of the pan.

I used a thing-a-ma-jig to break up the chow mein noodles. If I don't do that, it's much more difficult to spoon them out onto the waxed paper (plastic wrap and parchment paper work just as well).

Note: Definitely have the w. paper or plastic wrap laying out on the counter top before you start.

Have all of the ingredients measured out before you start. At least most of them.

There's no rush to spoon them out onto the w. paper quickly. Take your time. The chocolate doesn't harden fast the way no-bake cookies do.

Keep the flame low when you're melting the choc. and butterscotch chips.

Don't expect them all to be the same size once you've dropped them on the w. paper. Anyway, they don't need to be. Some people will want smaller cookies and others will want big ones. So it all works out in the end.

Hahaha! By sheer coincidence we had Chinese food last night.
We only got about half a cup of those noodles though. I have the ingredients except for the noodles and the peanuts. I think I'll try a half batch.... 4 cups is a lot of chocolate chips for an experimental cookie... If they are good, my (almost) 16 year old (her birthday is on Thursday) won't touch them so there will be more for the rest of us.
(maybe I'll go all out and make some of the coconut ones too, she likes those ~ and then I wont touch them!)

Thanks for the tip on breaking up the noodles. I have a thing-a-ma-jig that should do the trick!

I have never tried haystack cookies. I will have to try them.
