help with dinner menu
Hi all would love some fresh ideas I've been in a rut with cooking... need to get healthy but not over do it. Doesn't help when my other half is picky with what he eats. He doesn't eat chicken, pork or spicy things but his favorite foods seem to be Mexican inspired dishes like totadas, nachos, things like that.
I'm sick of the old routine lol
here's what we generally do
Pizza
nachos
tostadas
Italian mince and veggies
quiche and salad
sausages and salad
lol that's pretty much my thing at the moment and I'm really wanting to expand. I literally can't bake lol I can't even make Jelly it just doesn't set right in the fridge so easy things please!!
he doesn't eat fish either... picky picky man blah. I'm happy to eat most anything except spicy things.
so please help!!

What meats does he like?
What veggies/fruits does he like?
Do you prefer to saute - bake - fry?
Do you like casseroles? soups? sandwiches?

Gremlin he likes brocoli, potatoes, cauliflower and carrots
he likes grapes, banans and mandarines. He'll eat salad stuff
like mixed lettuce salad with capsicum and cherry tomatoes.
As for meat he likes lamb, beef and bacon he is also picky on
egg things he'll mainly only eat Quiche.
He's more into things done on the fry pan or in the oven so
or grilled. Sandwhiches could be interesting.

How about a pot of beef stew with his favorite veggies?
Sandwiches, you say? Here's one that we love, it's kind of like a grilled cheese sandwich, but not....
2 slices of fresh bread (white)
1 to 2 slices of mozzarella or provolone cheese (2 slices makes it a better sandwich)
pepperoni - whatever brand you like. We like Hormel.
a jar of your favorite spaghetti or pizza sauce (we use Prego spaghetti sauce)
Butter one side of each of the slices of bread.
Heat-up a frying pan on the stove.
Lay one slice of the bread in the pan, butter side down.
Lay one slice of cheese on top of it.
Layer pepperoni's on top of the cheese (depending on how many you like)
Then another slice of cheese on top of that.
Then the other slice of bread on top - butter side up.
Keep the flame on medium so the bread doesn't brown too fast - this gives the cheese time to get warm.
When the bottom slice of bread is light brown, carefully flip the sandwich and let the other side cook until it's golden brown.
When both sides are done, put the sandwich on a plate and cut it into 4 or 5 strips. Dip it in the warmed spaghetti or pizza sauce.
It's like making pizza sticks!

Broccoli, cauliflower, and carrots are all good either raw or cooked. Cut small (or even grate the carrots) to mix in salads. The broccoli and cauliflower can be steamed or sauteed with a variety of sauces - cheese, butter, tomato, etc. There are several soups that can double as sauces for meats, veggies, or to make casseroles. Cream of celery, cream of mushroom (goes well with beef), cream of chicken (works with chicken or fish such as tuna), cream of tomato (there are a couple of different ones), there is even a cheddar cheese soup. Broccoli and cauliflower go well in quiche, and so would bacon. You can also make mashed carrots - sort of like mashed potatoes. Cook the carrots and then mash them up with a bit of butter. Potatoes are very versatile. You can slice them and use them in casseroles with any of the meats. Throw in any or all of the broccoli, cauliflower, and carrots. You can use one of the Campbell's condensed soups for a sauce. Depending on which soup you use, it would change the whole casserole. You can also add potatoes (sliced or shredded or cubed) or rice or pasta. Casseroles open up a whole variety of dinners and are fairly easy to make. Throw everything in a cake pan and throw it in the oven to bake. It is even easier if you cook the meat ahead of time.
Grapes, bananas and mandarins are also all good in salads. Grapes are also good frozen. Bananas make interesting sandwiches - I like them with peanut butter. Mandarins lend a nice flavor to meats. You could make a sandwich with lamb or beef, and instead of tomatoes on it, use the mandarins.
I'm not too familiar with lamb, but I'm sure it could be cooked ahead just like beef can. Then you can have it for soups, salads, sandwiches, or to throw in casseroles. Bacon can also be cooked ahead and used in sandwiches and salads. Even in a soup or casserole with potatoes and cheese. Bacon also goes well with broccoli or cauliflower.
I seldom measure when I make soups or casseroles. I just throw stuff in until it looks and smells and tastes right. The only problem with that, is that sometimes it is hard to duplicate one that I really really like...

Lamb can definitely be cooked ahead, just like beef. Also buffalo, if you can find it, is a great change from beef. There's usually a lot less fat in buffalo.
I don't measure for soups either. There's something very interesting about a thrown together pot of soup. You can also add a little bit of pumpkin for thickness and cinnamon adds to the flavor.

Heres what I had planned out for two weeks
Nacho/Taco/Burrito Night, chicken flavored rice and the following toppings lettuce-tomato-avocado-onion-cheese-sour cream
Sausage Soup w/mushrooms & spinach, bread rolls
Salmon, rice, garlic green beans
Grilled Flank Steak, baked potatoes, grilled Zucchini & eggplant
Grilled BBQ & Red Hot chicken pieces, pasta salad w/ cucumbers, tomatoes, bacon
Sesame Pork Lo mein w/ broccoli, squash, onion, mushroom
Brats & Peppers w/broth , rice
Pork Chops, rice, beans
Spaghetti w/ground pork red sauce
Chili w/beef & beans, Frito's, saltines
Creamy Broccoli Pork chops, garlic bread, peas
Burgers, fries, corn on cob
Chicken Alfredo Pasta
Corn Beef on rice w/ corn & fries
