For baked potatoes, I usually just throw in the oven, not wrapped in foil. Sometimes I'll coat with olive oil, sometimes not. I'm not too fond of cooking them in the microwave.

I love baked sweet potatoes too. I do them the same way, just throw in the oven, but without any oil. I do put some foil on the baking sheet though, just for easier cleanup.

OOooh I'm jealous - I don't have an oven and I don't have space for a microwave, and I really miss jacket spuds. I've considered boiling or pressure-cooking potatoes and then putting them in the toaster-oven for a bit to crisp the skins some - do you think that might work?

For filling, just plain butter or cheese - or cheese and (British type) baked beans. I think they work well with curry too, if you're bored of rice. In fact, butter and a pinch of curry powder is good too.

Absolutely! I eat 'baked' potatoes like that all the time. Actually that's how I usually make them. They're very good that way, and they don't have that tooth-braking skin. Yeah, I don't have a microwave either. Ours quit, and a friend of mine kept saying it was un-healthy anyway, so we never got a new one. We make it okay, but I miss it...

I generally micro them and top with sour cream..
I also LOVE chunking them putting them in some caserole dish to fit with olive oil, Parmesan cheese, onions and garlic. Sometimes I'll add a little white wine or milk, or no fluids.. Love it!

I had a few too many baked potatoes during my first trimester, and have honestly gotten a bit sick of them, lol.

But, I still love mashed potatoes and oven baked fries...esp the oven baked fries!! I know this is getting a bit OT from the baked potatoes, but I love this recipe for mashed potatoes. Actually, she has a whole section of potato recipes listed if you're looking for things to do with them.
