Cook ahead meals are great. I make soup in my crock pot with whatever I have in the fridge. I usually start with a pumpkin base and add vegetable or chicken broth. Then I just toss in whatever vegetables I find. Sometimes I add leftover chicken or turkey.

I love leftovers!!

Leftover beef roast - Hot roast beef sandwiches

steak - stir-fry

Chicken - soup or pot pie

Chicken carcass - stock

Ham - scalloped potatoes with ham

We always have leftovers. In our houshold there is just two people. We try to make food for just one meal but always make too much.

I do too and there's four of us. lol

Last night we had minced meat with potatoes. I made it into omelette this morning. The kids love it.

Rice symbolizes wealth and prosperity and thus makes for a fine new dish, on New Years.
Italian recipe of stuffed rice balls or Arancini di Riso stuffed with Parmesan cheese and a sauteed vegetable that contains onion, bell peppers, porcini mushrooms and carrots, all of these are seasoned well and then stuffed into rice balls and deep fried, then served with tomato ketchup and a sprinkle of Parmesan.
Voila! The rice you made last night turned into yummy deliciousness.
