I have 2 recipes that are my favorite. The first one is on the back of the Bisquick box, but probably not what you're looking for.
The other one is the one I used for our family 'day-after-Christmas-breakfast' a couple years ago. Everyone liked them pretty well.
PANCAKES-
1 egg
1 cup flour
3/4 cup milk
2 Tablespoons butter (softened)
1 Tablespoon sugar
3 teaspoons baking powder
1/2 teaspoon salt
Stir all ingredients together until everything is mixed. There will still be some lumps in the batter. If you like thinner pancakes, add 1 or 2 tablespoons of milk.
You can add 1/2 cup of berries, pineapple, chocolate chips or anything that suits your fancy.
I would have never thought of chocolate chips, but a little boy I watch asked me to put chocolate chips in the pancakes I was making him this morning. I didn't add any though. It seems like that would be the same as serving a candy bar with breakfast.
If you have extra pancakes, you can wrap them in a Ziploc bag and store them in the freezer. Let them cool down before you freeze them.

Well is it pancakes or pancake(cake you would make in skillet)? :P
I did make pancakes before....:P

I have a recipe somewhere for a big pancake that you bake in the oven. I'll see if I can locate it in my highly organized recipe "collection".

Here is a great fluffy pancake recipe!
- 2 cups flour
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup buttermilk
- 3/4 cup milk
- 2 large eggs, separated
- 1/4 cup melted butter
- vegetable oil
Preparation:
In a mixing bowl, combine the flour, sugar, salt, baking powder, and soda.
In another bowl, whisk together buttermilk and milk, egg yolks, and melted butter. Blend into the dry ingredients just until all ingredients are moistened.
Beat egg whites in another bowl until stiff peaks form. Fold into the batter until well incorporated. Heat a small amount of oil in a large skillet over medium heat. When skillet is hot enough for a drop of water to sizzle, scoop pancake batter onto the skillet in about 1/4-cup portions, spreading slightly. When edges are rather dry and bubbles are popping and bottoms are nicely browned, about 2 to 3 minutes, turn over and cook the other side until browned, about 2 minutes longer.

Pancake Sandwiches
Hey, I got this from a friend. To make the pancakes more interesting for kids, make it into pancake sandwiches.
To make things easy, I will just buy ready pancake mix in the supermarket.
1 box pancake mix
4 pieces bananas, mashed
1/2 kilo sausage patty
peanut butter and jelly
Directions:
1. Make pancakes according to package instructions.
2. Fold in mashed bananas.
3. Cook small pancakes on the skillet (about 3 inches in diameter). Set aside.
4. Get a pancake and spread peanut butter on one side. Get another pancake and spread fruit jelly on one side. Make a sandwich out of the two pancakes.
5. Get a pancake, spread butter on it, then place sausage patty on top. Drizzle maple syrup on top and cover with another pancake.

We love pancakes at my house! I have several, but this is currently my "go-to" recipe.
Best Buttermilk Pancakes
2-1/2 cups all-purpose flour
1/4 cup granulated sugar
2 slightly heaping tsp baking powder
2 tsp baking soda
1/4 tsp salt
2 eggs
2-1/2 cups buttermilk
1/4 c. vegetable oil
Preheat a nonstick skillet (or better yet, a griddle) over medium heat.
In a medium size bowl, sift together flour, sugar, baking powder, baking soda and salt. In another bowl whisk together the eggs, buttermilk and vegetable oil until well combined. Add the wet ingredients to the dry ingredients and stir just until combined. Pour the better by spoonfuls onto the hot pan or griddle forming 5-inch circles.
When the edges appear to harden and bubbles form on the top, flip the pancakes and cook the pancakes on the other side for 2-3 minutes or until golden brown. Serve with maple syrup.
