Can't beat Betty Crocker! I've been using this one forever; they are especially good if you add blueberries to the pancakes right before flipping them.

1 egg
1 cup all-purpose flour
3/4 cup milk
2 tbs vegetable oil
1 tbs sugar
3 tsp baking powder
1/2 tsp salt

Beat the egg until fluffy, then beat in the remaining ingredients. For thinner pancakes, add a little more milk.

I like to add banana slices to the batter and cook them that way. Po)
We had them frequently that way when I was a kid. Toss on some clear corn syrup and they're mmm-mmm-yummy!

I tried mixing in sliced apples with the pancake mix. I put some butter on my non-stick pan and cooked the pancake. It was good! I will try them with grated cheese on top next time.

Someday I will have to write down my recipe .... I make them in the eyeball and dump method, after making them for so long! Mine are a hearty and healthy version.

I start with-
2 eggs, a splash of vanilla, about 2 cups to 2 1/2 cups of milk, a plop of applesauce ( I think around 1/4-1/2 a cup), and 1/4-1/2 cup of ground flax seed.

Mix well.

Then add 2-2 1/2 cups of whole wheat flour and 1-2 tsp of baking powder and 1 to 1 1/2 tsp of cinnamon.

Mix well again- if i want to add blueberries- I leave it thicker so it plops out of the scoop and then spread it with the back of the scoop a bit. If not adding blueberries, I thin it out if needed (adding more milk) so it "pours".

Cook in on medium heat as normal pancakes.

I make my own syrup too using the Directions on the Maple flavoring... I usually add 1/2 more water than they say to lower the sugar level and then add in some vanilla (1/2-1 tsp).

I come from a big family (9 kids) so Mom always made BIG recipes. She made pancake mix and would store it in the fridge. Then when we wanted pancakes, all you did was add water and egg and cook them.

Pancake Mix

5 pounds flour
2/3 cup baking powder
2 Tablespoons salt
4 teaspoons cream of tartar
3/4 cup sugar
4 cups shortening
5 cups dry milk
Mix well and store in fridge or freezer until used.

Then, we would beat an egg in 1/2 - 1 cup of water and stir in however much pancake mix it took to make the right consistency - usually about the same thickness as a cake batter. Mix it a little thicker and with more egg than water for waffles. Also suitable for adding just about anything to the batter. I liked to make a ring on the griddle and break an egg into the center - pancake and egg - yummy!
We always made our own syrup too. 1 cup water, 2 cups sugar, maple flavoring to taste (about 1 tsp or so). Add the maple after the sugar is all dissolved in the water - and make sure it boils for a few minutes so it doesn't crystalize in the fridge.

I can live without pancakes...when I make them I make them for Isabel... her favorite are of course chocolate chip. I will have crepes over pancakes any day. :P Crape with nutella and toasted coconut...yuuuummy!!!

I also love crepes. i especially like mango with chocolate syrup and vanilla ice cream.

Breakfast foods are such a good way to sneak in healthy ingredients without even noticing. Seriously, beneath the syrup or jam whole wheat and flax seed will go unseen even by most picky kiddos!
