Recipes using kale
I have a couple of recipes that I make with kale. But, when I buy kale at the store, it's always in a HUGE bunch and we never end up eating more than half before it goes bad. So, give me your best kale recipes, please!!

Here's my fav kale recipe:
1/2 box whole grain linguini (or fettucini or something similar)
2 cups milk or cream
1 cup Parmesan cheese, grated
2 tbsp butter or margarine
1/2 tsp salt
1/4 tsp fresh ground black pepper
2 cups fresh basil leaves
1 cup sun-dried tomatoes, julliene cut
2 cups kale, chopped into roughly bite-sized pieces
1/2 cup pine nuts
Put pasta on to cook, according to package directions for al dente.
Place basil in food processor and chop finely. Set aside.
Lightly steam the tomatoes and kale (or just add to cooking pasta for the last couple of minutes). If you like crunchier kale and chewier tomatoes, skip this step.
Lightly toast pinenuts in oven, if desired.
In saucepan, melt butter. Add flour and brown for 1 min. Pour in milk and heat to gentle boil. Add parmesan gradually, stirring constantly until cheese has melted. Remove from heat. Stir in salt, pepper and basil from food processor.
Drain pasta. Toss the pasta with the sauce, tomatoes, kale, and pine nuts.
Garnish with basil leaves and parmesan, if desired.

To save time making this on a weeknight, use jarred alfredo sauce, jarred pesto sauce, don't steam veggies or toast pine nuts.

Wow! This sounds sooo good. And I have kale in the frig right now. I have never thought to add kale into a cream sauce.

Kale freezes really well. If I see that I'm not going to use it soon I throw it in the freezer and it keeps really well.
I like to heat some olive oil and garlic in a pan and saute the kale in it. A little bit of salt and pepper....you can also saute a hot pepper and onions in with the kale. We like spicy so if we can add hot peppers to something we do  This can be a side dish or tossed with pasta or rice.
If you remove the hard middle veiny part of the kale your kids will enjoy it more too.

I had it this way at a friends house. My girlfriend greeted me at the door and said try this. She made me close my eyes and said, "What is it?" I had no idea but it was crunchy and salty and really good. I was shocked that it was kale. We sat at the table and munched on it like potato chips. I had forgotten all about this. Thanks for reminding me. I will make some for lunch for the kids.

I like kale b/c it makes vegetarian meals filling, which is tough!

I love this recipe: http://www.ehow.com/how_2319879_carr...e-muffins.html healthy and delicious! I put the kale in the blender and my toddler gobbled these right up. Only once did she pull out a slightly bigger piece of kale and say "ew, leaf"..lol. they're very yummy!

That recipe sounds yummy, but I'm weary of cooking with honey for young children b/c of the risk of botulism
