Honey is fine after a year.. but I'm sure you could sub the sweetener of your choice

I agree that using any sweetener would be fine. I've heard the honey thing, but honestly I don't know the truth in it. My herbalist(has bees) has never even heard of
this. Honey can't go bad. Nothing can grow in it. You can even use it for cuts and infection.

I love kale I've been a vegetarian for 11 years now and embarrassed to say we just started eating it, because our bunnies love it. I love adding it to mixed veggies or I came up with this last night saute in olive oil (added some chard also) with some liquid smoke & balsamic vinegar. Cook until wilted and it's ready it was so yummy. Another favorite of mine is kale chips http://vegweb.com/index.php?topic=16634.0 you wouldn't think it sounds good, but they are very addictive

I've also tried the kale chips - they are addictive! But my kids still refuse to eat it...won't even taste it...I guess because it's green. Bah, they don't know what they're missing! LOL!

Default Beans and Greens


I made the beans and greens as a side dish today for dinner. Everyone enjoyed it.

Beans and Greens


  • 1 cup canned cannellini beans
  • 1 clove garlic, crushed
  • 1/2 small onion, chopped
  • Several leaves kale, rinsed and sliced(vein removed)
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh thyme
  • 1/4 tsp cayenne pepper
  • 1 tsp butter


Directions

In a saucepan, place the cannellini beans, garlic, onion and kale with just enough water to cover. Season with 2 teaspoons of parsley, thyme smoke seasoning and salt and pepper if desired. Bring to a boil and cook until vegetables are tender.

When I cook kale I just cook it in a big pot with water. smoked ham hocks and alot of onions and cook it low and slow...Mmmm makes me wanna cook some tonight!!

Thanks for all the terrific recipes (and for the info on honey being used for cuts). More kale is on my shopping this for next week!

don't have the recipe, know one is floating around, but Olive Garden's Suppa Toscana(sp?) soup is super yummy and I know it has kale in it...because my husband picks it all out and gives it to me LOL

We are big fans of this lentil/sausage/kale soup:

Read the comments and adjust accordingly (like multiply recipe quantity, use all broth vs. water, increase sausage, increase vinegar to taste, etc).

I also just had this a week or so ago and it was a huge hit with the whole family (kids included)

How about Zuppa Toscana like they serve at the Olive Garden? I use this recipe as a guideline but I tend to make it chunkier/more hearty. I also like to experiment with different types of sausage. My homemade toscana is my husband's very favorite meal
