Default s'mores.. in a cookie!!

So I was just thinking last night how fun it would be to add mini marshmallows to chocolate chip cookies. Almost like smores. Then I thought about graham crackers.. and found a recipe for cookies that incorporates graham cracker crumbs, then edited it to become smores cookies! Here's the recipe:

Ingredients

3/4 cup butter, softened
1/2 cup white sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 cup graham cracker crumbs
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup chocolate chips, or more if you want it more chocolatey use milk chocolate chips because smores are usually made with milk chocolate!
1 cup mini marshmallows, or more if you want it more marshmallowy

cream butter and sugar, add egg and vanilla. mix flour, crumbs, salt, and baking soda together and add to the butter mixture. Stir in chocolate and marshmallows. Bake about 10 minutes at 375*



My marshmallows oozed all over the place because I suddenly got the idea/intense urge to try this at 10:30 at night and it was too late to go to the store. So I had to use big marshmallows that were chopped up. I imagine mini marshmallows that, you know, haven't been cut apart would hold their shape! These were sooo good. I can't wait to make them again with proper mini marshmallows! And it was very exciting to try a new kind of cookie. I can't believe I've never heard of smores cookies before! They're AWESOME! Definitely going to make these next time I go to a potluck or some other event that necessitates bringing a snack

I used whole wheat flour since it was all i had, and organic sugar! That makes them healthy OH! And I was out of eggs too so I had to use 1T flax meal and 3T water, microwaved to make flax goo. Gosh, so many improvisations in this. so flax also makes it healthy.

Oh man.... those look SO GOOD!! I bet they would ROCK as bars too!! oooo.. S'Mores Brownies!! YUM lol. Wonder when Our next church dinner is

Mmmmmmmm.... I'm going to have to try that!

If'n you like s'mores as much as I do, try this one. Bake a pan of whatever brownies you like in a store-bought graham cracker crust. Then whip up a batch of homemade marshmallows (some of the jar creme would probably work too, but homemade are so tasty, and oddly easy to make) and cover the brownies.

Broil to toast the marshmallows and see if you can hold back from eating the whole pan.

Seriously, I challenge you.
