I wasn't going to cook, but I had a big package of chicken breasts in the fridge that needed to be used.
I mixed some flour, crushed salad croutons, white corn meal and pepper in a big Zip-loc bag. Washed the chicken and dipped it in milk. Dropped it in the flour mixture and shook the bag.
Sometimes I don't like to make it this way because the minute I start shaking the bag, I start thinking about that Shake 'n Bake commercial from the '70's (?). The one with the twin girls telling their daddy, "And we helped!".
Anyway, I covered the cookie sheet with heavy duty foil and poured some veggie oil on it. Put the chicken on it and baked it at 350° for 30 minutes. Raised the oven temp to 475° and let it bake for 5 more minutes because the coating wasn't crispy. The extra 5 minutes at the higher temp helped some.
We also had biscuits and.... baked beans? Not my choice, but that's what my better half wanted. Pretty simple though, and simple is always good when it comes to cooking.
