Oh, that's great! I never thought about cutting off how much you need and putting it back in the freezer.

I've never heard of the 'Company's Coming' cook books. Of course, I couldn't tell you the names of any of the cook books in my cupboard. Way up on the top shelf......out of reach.......unused and underappreciated. Does Pampered Chef sell it's products in Canada? They make a beer bread mix that's really good with dips. Kind of 'spensive though - $5 a box for 1 loaf.

DM - perhaps an aunt or cousin would have the recipe for the bread and glaze?

"Company's Coming" by Jean Paré is a huge series of cookbooks that are easy to follow and use "normal" ingredients. For someone with my cooking skills, they are FANTASTIC. I have never had one of her recipes fail. I believe she is Canadian, but I am sure that I read that her books are also published in the States. I probably have at least a dozen of her books and I use a handful of them on a regular basis. The cover is completely gone off of my favourite one!

Pampered Chef does sell stuff here, but I have never gone to a "party" because I heard that the stuff is super expensive. I have also heard that it is worth the price, but I am happy with my cheap stuff so I figure that what I don't know won't hurt anyone. (I think my husband appreciates that philosophy too since we are a one income household!)

DM I think you need to go on a quest for that recipe. I can't believe that you would tease us like that. (wait. yes I can!) I'll bet someone got it from her. I've got my grandma's coffee cake recipe.

That's the kind of cook book I like, one that uses ingredients I already have.

I never liked zucchini before. Until a friend of mine brought some to work that his mother had made. It was delicious and very moist. I was really surprised that I couldn't taste the zucchini though.

You're right. You really can't taste the zuccini in the bread. It's kind of like carrot cake. I don't taste the carrots in it. Unless there are some shredded on top of the frosting. They look nice on the frosting, but to me, raw carrots and sweet frosting aren't compatible. I'd never dip a fresh carrot in a bowl of frosting. lol

I'm wondering if I could substitute with pumpkin? I will try it tomorrow and let you all know how it turns out. I think I may add alittle banana too. I have some nice brown ones that would be perfect.

Default banana muffins

I ended up making banana muffins. They were a super easy recipe. I was rushed to get to an appointment in the city but wanted to have a snack for the kids on the way. They are super healthy and very tasty. Recipe follows.
Banana muffins
350* 20-25 min
2 eggs beaten
4 Bananas mashed
2 cups flour
3/4 cup sugar
1/2 tsp salt
1 1/2 tsp baking powder

Combine eggs and banana. In separate bowl mix flour, salt,sugar and baking powder. Add dry to wet, mix well. Bake in greased muffin tins for 20- 25 min at 350*
