I would have loved to have added walnuts to my muffins. But lately my dd has become sensitive to them.

Amish Zucchini Bread Recipe

Ingredients:
3 eggs
2 cups of sugar
2 cups of zucchini, shredded
1 cup of cooking oil
2 teaspoon of vanilla
3 cups of flour
1 teaspoon of salt
1 teaspoon of baking soda
1 teaspoon of baking powder
2 teaspoon of cinnamon
1/2 teaspoon of nutmeg
1/4 teaspoon of cloves
1/2 cup of chopped nuts
1/2 cup of raisins

Directions:
Beat eggs until foamy. Stir in sugar, zucchini, oil and vanilla. Gradually add dry ingredients and spices. Stir in nuts. Pour into bread pans which have been greased only on the bottoms. Bake at 325 degrees for 60 to 80 minutes. Cool 10 minutes. Remove from pans and cool completely. Makes 2 loaves

I make zucchini bread a lot in the summer with zucchini's from my garden. But I think these recipes seem better than mine.

So my zucchini bread recipe sounds a lot like sondray's except, I use only cinnamon and nuts. But, I wanted to mention that zucchini freezes extremely well. In the summer, buy a ton when they are in season, much cheaper, or grow them. Shred the zucchini and separate into 2 cup batches. I use the Ball freezer jars. Its ready to go when you want a batch of bread. We eat zucchini out of our garden all year and enjoy zucchini bread often.

Okay, this thread has been napping long enough.

I got 2 nice big zuccini's out of the garden today and looked for this thread for my recipe. I think I'm going to try the recipe from your cook book Angela.

Luckily, the humidity isn't very high, so it should be alright to use the oven.

It's always pumpkin bread or carrot loaf, and never zucchini bread/loaf. I haven't tasted one before. I will try your recipes when I get my oven connected.
