Definitely something with his pictures or his handprints so they can keep it as a keepsake and hang it up every year.

You can do a cute construction paper project and use marker or ink (washable) to make handprints in the middle and surround it with stickers and a personal note.

You can use the same idea with a plaster type ornament.

I would take his picture, glue it to a valentines card and let him decorate around it. A little homemade valentine.

I don't have a picture, but one year for Mother's Day, I had my son make a fingerprint "bouquet" for my mom and grandmother. I took a sheet of cardstock, got out some paint, and had him make twelve fingerprints in one area. Then, we took a green marker and drew stems and leaves, bringing them together at the bottom (just like a bouquet) then drew on a bow. I framed them and wrapped them up. It's similar to the one Jrits posted, just using fingerprints to make a whole bunch of flowers.
